These pies are easy to prepare and bring comforting flavors to any meal! Each one has its own unique filling—from rich meat to savory ham, creamy potato, and mushrooms—making them perfect.
Meat Pie
Ingredients:
- 500g ground meat
- 600g phyllo pastry sheets
- 1 cup sparkling water
- 1 cup sour cream
- 1 onion
- 5 eggs
- 200ml oil
- Salt and pepper to taste
Preparation: Sauté the meat with finely chopped onion, adding salt and pepper to taste. Mix in half a cup of sour cream, two egg yolks, and fold in two beaten egg whites. Divide the phyllo sheets into three parts. Layer one-third of the sheets in a baking pan, brushing each sheet with oil. Spread half of the meat filling on top, then repeat with another layer of pastry sheets and filling, ending with a layer of phyllo sheets. Cut the pie into pieces and pour hot oil over the cuts. Whisk the remaining egg whites until stiff, mix in the egg yolks, sour cream, and sparkling water, and pour over the pie. Let it sit for 30 minutes, then bake at moderate heat for the first 20 minutes, covering the pie with parchment paper.
Ham Pie
Ingredients:
- 4 eggs
- 1 cup yogurt
- 1 cup oil
- 1 cup flour
- 1 packet baking powder
- 150g diced ham
- 150g pickles, diced
- Optional: a few mushrooms, chopped
Preparation: In a mixing bowl, whisk the eggs, then add the oil, yogurt, flour, and baking powder. Fold in the ham, pickles, and mushrooms if desired. Pour the mixture into a baking dish and bake at a low temperature until golden.
Potato Pie
Ingredients:
- Flour
- Water
- 6-7 large potatoes
- A bit of milk or sour cream
- Salt and spices
Preparation: Prepare a dough with flour, water, and a pinch of salt, kneading until smooth. Let it rest for about 30 minutes, kneading occasionally to achieve a soft, pliable dough. While the dough rests, boil the potatoes in salted water as you would for mashed potatoes. Roll the dough into a ball and cover with a clean cloth to relax the dough. Once rested, roll out the dough thinly, brush with oil, and sprinkle with the mashed potatoes mixed with a bit of milk or sour cream, salt, and pepper. Roll up the dough with the filling and place in the oven to bake. Once baked, drizzle with lightly salted boiling water and a bit of melted butter to soften, then return to the oven until the liquid absorbs. Mushroom Puff Pastry Pie
Ingredients:
- 1 block frozen puff pastry
- 1 packet instant mushroom soup mix
- 2 eggs
- 1/2 cup milk
- 2 tablespoons sour cream
- 1 cup cooked rice
Preparation: Combine the mushroom soup mix with one egg, milk, sour cream, and cooked rice, letting it sit for 10-15 minutes. Roll out the thawed puff pastry thinly on a floured surface, spread with the filling, and fold the edges toward the center. Brush with egg yolk and bake in a preheated oven at 220°C for 25-30 minutes until golden brown.
