Enjoy crisp, flavorful pickles made right in your kitchen with this simple recipe. Sweet, tangy, and perfectly spiced with mustard seed and turmeric, these pickles are a tasty addition to sandwiches, snacks, or as a side dish.
Ingredients:
- 7 lbs unpeeled green cucumbers
- 2 large onions
- 3/4 cup salt
- 5 cups vinegar
- 5 small cups sugar
- 1 tablespoon mustard seed
- 2 teaspoons turmeric (leveled)
- 2 heaping teaspoons celery salt
- Ice cubes
Instructions:
Slice the cucumbers and onions into thin rounds and place them in a large dish or 2-gallon plastic bucket. Sprinkle with salt, cover with ice cubes, and press down using a weight. Allow the mixture to sit for 3 hours.
Afterward, drain the cucumbers and onions and rinse them twice with cold water, then drain thoroughly. Transfer the vegetables to a large saucepan and add the vinegar, sugar, mustard seed, turmeric, and celery salt. Heat the mixture until it is just about to boil.
Once heated, pour the pickles into sterilized bottles and seal tightly after they have cooled completely. Store in a cool place and enjoy your homemade tangy cucumbers!
