The cake is called Othello. Ingredients for the crust:
100 g of butter,
100 g of powdered sugar,
130 g plain flour,
a bit of salt,
1 vanilla sugar,
100 g of cooking chocolate,
4 egg yolks, 3 egg whites.
Ingredients for the cream:
180 g of sugar
40 g of margarine
0.6 dl of sweet cream
6 sheets of gelatin (1 packet ground)
5 dl of sweet cream
2.5 dl of cooked vanilla pudding
1 glass of cognac (rum)
To decorate:
chocolate shavings and powdered sugar
Othello cake Preparation:
Mix the softened butter well with half the amount of powdered sugar and a little salt. Melt the cooking chocolate and gradually add it to the margarine mass (when it cools down). Add egg yolks one by one. Beat the egg whites with the remaining sugar. Add the cream to the butter along with the flour.
Draw circles on greaseproof paper with a 24 or 26 circle and apply the biscuit. Bake at 350 F for 8-12 min. When the surface stops shining and becomes elastic under the fingers. Then it’s done.
For the cream, caramelize the sugar until it takes on a golden-brown color. Add butter and gradually add sweet cream (0.6 dl). When everything is combined, remove from heat and cool. Soften gelatin, melt and mix with whipped cream (5 dl). Press the pudding and mix with cognac. Mix all these creams and spread wafer by wafer. Leave in the refrigerator overnight. Decorate with chocolate shavings and powdered sugar.
The result is excellent and as complicated as it looks, it is not. Try it, I hope you like it.
