Who doesn’t love the bright flavor of oranges paired with rich chocolate? This Jaffa-style biscuit is soft, juicy, and bursting with citrus in every bite.

Ingredients:

  • 4 oranges
  • 4 eggs
  • 1 ¼ cups sugar
  • 2 ½ cups flour
  • 1 packet baking powder
  • 1–2 tablespoons cocoa powder (optional)
  • ½ cup milk
  • ½ cup oil
  • 3 tablespoons apricot jam
  • 3.5 oz (100 g) dark cooking chocolate
  • ½ cup heavy cream

Instructions:
Freeze one orange in advance.
Beat eggs and sugar until foamy and the sugar is dissolved. Gradually add flour mixed with baking powder, then oil, milk, and cocoa if using. Pour the batter into a lined baking pan and bake until done. Let cool, then slice horizontally into two layers. Return the bottom layer to the pan.

Crumble the top layer into a bowl. Grate the frozen orange into the crumbs, then mix in the apricot jam. Add rum if desired. Adjust sweetness with powdered sugar, and moisture with orange juice if needed.

Soak the bottom layer (still in the pan) with juice from 3 oranges. Spread the prepared filling evenly over it.

Melt the chocolate with heavy cream over a double boiler until smooth. Pour over the cake and spread evenly. Chill before serving.
