This classic New York Cheesecake features a rich, creamy filling and a buttery crust. It’s an easy-to-make dessert that’s perfect for any occasion.
Ingredients:
Crust:
- 1 1/2 cups (about 7 oz) graham cracker crumbs (or digestive biscuits crushed)
- 7 tablespoons unsalted butter, melted
- 2 tablespoons sugar
Yellow Cream Filling:
- 2 cups (16 oz) cream cheese (fresh cheese)
- 2 whole large eggs
- 3 tablespoons sugar
- Juice of 1 lemon (about 2 tablespoons)
- 1 teaspoon vanilla extract
White Cream Topping:
- 1 cup sour cream
- 3 tablespoons sugar
- 1 teaspoon vanilla extract
Crush 7 oz graham crackers (or similar plain cookies) in a plastic bag using a rolling pin. Mix with 7 oz melted butter and 2 tablespoons sugar. Press the mixture into a springform pan and bake at 400°F for 5 minutes.
For the yellow layer: In a bowl, beat 18 oz cream cheese, 2 whole eggs, 3 tablespoons sugar, juice of one lemon, and 1 teaspoon vanilla extract until smooth. Pour over the crust and bake at 340°F for 20 minutes.
For the white layer: Mix 1 cup sour cream, 3 tablespoons sugar, and 1 teaspoon vanilla extract. Spread over the warm cheesecake and return to the turned-off oven for 5 minutes.
Chill in the refrigerator for 4-5 hours or overnight before serving.
