Quick nettle pie you’ll love making for breakfast or dinner. It’s easy to prepare. This delicious recipe don’t require expensive ingredients, yet it offered a richness of flavors that graced many tables.
Ingredients for Nettle Pie:
- 1 cup (4.2 oz) plain yogurt (use this cup to measure other ingredients)
- 4 large eggs
- 1 cup milk
- 1 cup vegetable oil
- 1 cup fine cornmeal
- 1 packet (0.5 oz) baking powder
- 12 oz (about 2 ½ cups) crumbled feta or cottage cheese
- Salt and freshly ground black pepper, to taste
- 10.5 oz (about 5 cups) fresh nettles
- 4 green onions (scallions), finely chopped
- 1 lb phyllo dough sheets
- 3 tbsp vegetable oil
Preparation:
Clean and wash the nettles thoroughly.
Blanch them briefly in lightly salted boiling water (just until they wilt).
Drain well, let them cool, and finely chop.
Heat 3 tablespoons of oil in a skillet.
Sauté the finely chopped green onions until soft.
Beat the eggs well in a large bowl.
Mix in the yogurt until smooth, then add the oil and milk, stirring until combined.
Gradually add the cornmeal and baking powder, mixing thoroughly.
Stir in the sautéed green onions (drain excess oil), chopped nettles, and crumbled cheese.
Season with salt and pepper to taste.
Preheat the oven to 400°F.
Lightly grease a baking dish.
Lay one sheet of phyllo dough on a clean surface and lightly brush it with the filling. Repeat with the second and third sheets.
On the fourth and fifth sheets, spread more filling. Roll the layers tightly into a log.
Repeat until all phyllo sheets and filling are used. Adjust the number of sheets per roll depending on their thickness.
Place the rolls into the baking dish and lightly brush the tops with oil.
Bake at 400°F for 10 minutes. Reduce the temperature to 350°F and bake for an additional 25-30 minutes, or until golden brown.
