Crispy on the outside and soft inside, these golden veggie balls bring together tender peas, carrots, potatoes, and a touch of spice. Perfect as a light appetizer or a healthy snack — they pair beautifully with ketchup or your favorite dip.
Ingredients (Makes about 12 balls):
1 cup fresh or frozen green peas
2 medium potatoes, peeled and cubed
1 large carrot, peeled and chopped
1 small chili pepper, finely minced (optional)
2 teaspoons ground peanuts
5 tablespoons breadcrumbs (plus 2 tablespoons for coating)
3 tablespoons shredded cheese (Cheddar or Parmesan)
1 teaspoon ground coriander
1 large egg
4 tablespoons olive oil
Salt, to taste
Instructions:
- Boil the potatoes, carrots, and peas until tender, then drain well.
- Mash together until smooth. Add 3 tablespoons of breadcrumbs, shredded cheese, minced chili, peanuts, coriander, and salt. Mix until well combined.
- Shape the mixture into balls about the size of a walnut.
- In a small bowl, beat the egg. In another, place the remaining breadcrumbs.
- Roll each ball first in the egg, then in the breadcrumbs to coat evenly.
- Heat olive oil in a skillet over medium heat. Fry the balls until golden brown on all sides.
- Drain on paper towels and serve warm.
