Ingredients (Makes 8 Mini Pizzas)
- 1 medium French baguette (or 4 slices sandwich bread)
- Pizza tomato sauce
Cheese:
- Mozzarella
- Cheddar
- Parmesan
Toppings:
- 1 medium tomato, diced
- 1 small onion, finely chopped
- 1/2 zucchini, diced
- 6–8 black or green olives, sliced
- 4 slices turkey or chicken deli meat, chopped
Optional additions:
- Mushrooms, sliced
- Sweet corn
- Fresh spinach
- Sun-dried tomatoes
- Crushed red pepper flakes
Seasoning:
Light drizzle of olive oil
Oregano or Italian seasoning
Salt and black pepper
Instructions
- Slice the baguette into 8 pieces, or cut each slice of sandwich bread in half.
- In a bowl, combine tomato, onion, zucchini, olives, and deli meat. Add a few spoonfuls of tomato sauce and mix gently.
- Spread a thin layer of sauce on each piece of bread, then evenly distribute the topping mixture.
- Sprinkle mozzarella, cheddar, and Parmesan over the top. Season with oregano, salt, and pepper.
- Arrange on a lightly oiled baking sheet and bake for about 15 minutes, until the cheese is melted and lightly golden.
- Remove from the oven, let cool slightly, and serve warm.
