Ingredients:

  • 4 cloves garlic, peeled and minced
  • 2 small yellow onions, thinly sliced
  • 2 fresh red chili peppers, finely chopped
  • 1 pound (16 oz) feta cheese, cut into cubes
  • 1 sprig fresh thyme, chopped
  • 1 sprig fresh rosemary, chopped
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon dried oregano (new ingredient for extra flavor)

Preparation:

  1. Peel and chop the garlic and onions. Slice the chili peppers and finely chop the thyme and rosemary leaves.
  2. Cut the feta into cubes and place in a clean jar. Add all the prepared herbs, spices, and chili. Sprinkle in the dried oregano for an extra Mediterranean touch.
  3. Pour the olive oil over the mixture, making sure the feta and herbs are fully submerged. Seal the jar tightly.
  4. Store in a cool, dark place, not in the refrigerator. Let the flavors meld for at least 3 days before serving.
