Ingredients:
- 4 cloves garlic, peeled and minced
- 2 small yellow onions, thinly sliced
- 2 fresh red chili peppers, finely chopped
- 1 pound (16 oz) feta cheese, cut into cubes
- 1 sprig fresh thyme, chopped
- 1 sprig fresh rosemary, chopped
- 2 bay leaves
- 1 teaspoon whole black peppercorns
- 1/2 cup extra virgin olive oil
- 1 teaspoon dried oregano (new ingredient for extra flavor)
Preparation:
- Peel and chop the garlic and onions. Slice the chili peppers and finely chop the thyme and rosemary leaves.
- Cut the feta into cubes and place in a clean jar. Add all the prepared herbs, spices, and chili. Sprinkle in the dried oregano for an extra Mediterranean touch.
- Pour the olive oil over the mixture, making sure the feta and herbs are fully submerged. Seal the jar tightly.
- Store in a cool, dark place, not in the refrigerator. Let the flavors meld for at least 3 days before serving.
