Mango Chicken Ingredients:
2 large boneless, skinless, chicken breasts, cubed,
1 fresh mango, peeled and cubed,
1 tsp. fennel seed, lightly crushed,
3/4 cup orange juice,
2 tbs. honey,
1 tbs. balsamic vinegar,
2 tsp. sesame seeds,
1 tsp. arrowroot powder,
1 tsp. water.
Serves 3.
Preparation time 20 minutes.
In a small bowl place the balsamic vinegar, honey, and sesame seeds. With a whisk or fork, stir this up well. Place the chicken in the bowl and stir this up to make sure the chicken is well coated with the mixture. Set this aside.
In a small saucepan place the mango, fennel seed, orange juice and place it on medium heat. At this time you can also place the chicken in a frying pan and cook until it is no longer pink inside.
Once you set the chicken on to cook, you can add the arrowroot powder to the mango mixture. To do this, place the arrowroot in a small bowl and to it add 1 tsp. of water. With a fork stir this up to make a paste. Place this into the saucepan and stir it up. If you have some arrowroot paste remaining, simply add a little more water to it and pour this into the saucepan as well. Simmer the mango on medium low heat for five minutes. It will thicken nicely. When the chicken is cooked and the mango mixture has thickened, place the chicken on a plate or bed of rice and pour the mango over top.
