- 8 large egg whites
- 1 cup granulated sugar
- 1¼ cups powdered sugar
- ¼ cup cornstarch
- 1 cup finely ground unpeeled almonds
For the Filling:
- 2 cups blueberries (fresh or frozen)
- 2 cups heavy whipping cream
- 3 tablespoons vanilla sugar (or 2 teaspoons vanilla extract + 3 tablespoons sugar)
- 3 packets of whipped cream stabilizer (like Dr. Oetker Whip It)
- ¼ cup sugar
For Decoration:
- 3.5 oz (100 g) chocolate glaze or melted chocolate
- Extra blueberries for garnish
Preparation
- Make the Meringue Layers:
- Preheat oven to 265°F (130°C).
- Beat egg whites at high speed until stiff peaks form.
- Gradually add granulated sugar while beating.
- Gently fold in powdered sugar, cornstarch, and ground almonds.
- Divide mixture into three parts and spread each into a heart-shaped baking pan (or trace heart shapes onto parchment paper).
- Bake each layer for about 45 minutes. Let them cool completely before assembling.
- Prepare the Filling:
- Whip the heavy cream with sugar, vanilla sugar, and whipped cream stabilizer until stiff.
- Gently fold in the blueberries.
- Finishing the Cake:
- Place the first meringue layer on a serving plate and spread with half the blueberry cream.
- Add the second meringue layer, spread with the rest of the cream, then top with the third layer.
- Chill in the refrigerator for at least 4 hours.
- Decorate:
- Drizzle the top with melted chocolate in an abstract pattern.
