Love Fantasy Cake is a light, fruity, and chocolatey delight that brings elegance and flavor to your table. Layers of almond meringue, whipped cream, and fresh blueberries create a tender dessert that looks as stunning as it tastes. Perfect for special occasions like anniversaries, Valentine’s Day, or any time you want to indulge in a little sweetness and love.

Ingredients

For the Meringue Layers:

  • 8 large egg whites
  • 1 cup granulated sugar
  • 1¼ cups powdered sugar
  • ¼ cup cornstarch
  • 1 cup finely ground unpeeled almonds

For the Filling:

  • 2 cups blueberries (fresh or frozen)
  • 2 cups heavy whipping cream
  • 3 tablespoons vanilla sugar (or 2 teaspoons vanilla extract + 3 tablespoons sugar)
  • 3 packets of whipped cream stabilizer (like Dr. Oetker Whip It)
  • ¼ cup sugar

For Decoration:

  • 3.5 oz (100 g) chocolate glaze or melted chocolate
  • Extra blueberries for garnish

Preparation

  1. Make the Meringue Layers:
    • Preheat oven to 265°F (130°C).
    • Beat egg whites at high speed until stiff peaks form.
    • Gradually add granulated sugar while beating.
    • Gently fold in powdered sugar, cornstarch, and ground almonds.
    • Divide mixture into three parts and spread each into a heart-shaped baking pan (or trace heart shapes onto parchment paper).
    • Bake each layer for about 45 minutes. Let them cool completely before assembling.
  2. Prepare the Filling:
    • Whip the heavy cream with sugar, vanilla sugar, and whipped cream stabilizer until stiff.
    • Gently fold in the blueberries.
  3. Finishing the Cake:
    • Place the first meringue layer on a serving plate and spread with half the blueberry cream.
    • Add the second meringue layer, spread with the rest of the cream, then top with the third layer.
    • Chill in the refrigerator for at least 4 hours.
  4. Decorate:
    • Drizzle the top with melted chocolate in an abstract pattern.
    • Garnish with fresh blueberries for a beautiful finish.
