Some desserts flirt. This one falls in love.

These Valentine’s Strawberry Pavlova are delicate yet dramatic — crisp meringue shells that shatter softly under your fork, revealing clouds of white chocolate cream and glossy strawberry filling inside. Light as air but rich in flavor, they feel special without being complicated.

With their soft blush tones and fresh berry finish, they look like they belong in a pastry shop window in February. But the real magic happens when you take that first bite — crisp, creamy, sweet, and just slightly tangy. It’s the kind of dessert that makes dinner linger a little longer.

Perfect for date night, Valentine’s gatherings, or when you simply want to serve something unforgettable.

Serves 8

For the Meringue Shells

  • 4 large egg whites, room temperature
  • 1 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon white vinegar
  • 2–3 drops pink or red food coloring (optional)

For the Strawberry Filling

  • 1 ½ cups fresh strawberries, chopped
  • ⅓ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice

For the White Chocolate Cream

  • 4 large egg yolks
  • 5 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 4 tablespoons unsalted butter, softened
  • ⅔ cup heavy whipping cream
  • 3 ounces white chocolate, melted and slightly cooled

Instructions

Preheat the oven to 250°F and line a baking sheet with parchment paper.

Beat the egg whites until soft peaks form. Gradually add the sugar, continuing to beat until stiff, glossy peaks form and the sugar has fully dissolved. Gently fold in the cornstarch and vinegar. If using food coloring, lightly swirl it in for a soft blush effect.

Pipe 8 heart shapes or round nests onto the baking sheet. Use the back of a spoon to create a shallow well in the center of each. Bake for about 90 minutes, leaving the oven door slightly open to allow moisture to escape. The meringues should remain pale and feel dry and crisp. Turn off the oven and let them cool completely inside.

In a saucepan over medium heat, combine strawberries, sugar, lemon juice, and cornstarch. Cook while stirring until thickened and glossy. Remove from heat and allow to cool fully.

In a heatproof bowl set over simmering water, whisk the egg yolks and sugar until pale and slightly thickened. Remove from heat and let cool. Beat in the softened butter and vanilla until smooth, then stir in the melted white chocolate.

Whip the heavy cream until soft peaks form and gently fold it into the white chocolate mixture until light and airy.

Fill each pavlova shell with the white chocolate cream and spoon the strawberry filling on top. Garnish with fresh strawberries, white chocolate shavings, or edible rose petals for an elegant Valentine finish.

Serve the same day for the best texture and flavor.
