For the Base
- 1 ready-made round sponge cake layer (or 2 small sponge rounds, about 4 inches wide)
OR - 1 cup crushed vanilla cookies mixed with 3 tablespoons melted butter (pressed into molds)
For the Cream Filling
- 8 ounces cream cheese, softened
- ½ cup heavy whipping cream
- ⅓ cup powdered sugar
- ½ cup raspberry purée (from fresh or thawed raspberries)
- 1 teaspoon vanilla extract
- 1 teaspoon unflavored gelatin
- 2 tablespoons cold water
For the Raspberry Topping
- ½ cup raspberry purée
- 2 tablespoons granulated sugar
- ¼ cup water
- 1 teaspoon unflavored gelatin
- 2 tablespoons cold water
Instructions
If using sponge cake, cut two rounds to fit inside small ring molds (about 4 inches wide). Place each round at the bottom of the molds. If using the cookie base, mix crushed cookies with melted butter and firmly press into the bottom of the molds. Chill for 15–20 minutes to set.
In a small bowl, sprinkle gelatin over cold water and let it bloom for 5–10 minutes.
In a mixing bowl, beat the cream cheese and powdered sugar until smooth and creamy. Add vanilla and raspberry purée and mix until fully combined.
In a separate bowl, whip the heavy cream until soft peaks form and gently fold it into the cream cheese mixture.
Warm the bloomed gelatin briefly in the microwave for about 10 seconds until dissolved but not boiling. Stir it into the cream mixture until fully incorporated.
Divide the filling evenly between the two molds and smooth the tops. Refrigerate for at least 30 minutes to begin setting.
For the topping, sprinkle gelatin over cold water and allow it to bloom. In a small saucepan, combine raspberry purée, sugar, and water. Heat gently until warm but not boiling. Remove from heat and stir in the softened gelatin until fully dissolved.
Allow the mixture to cool slightly, then carefully pour it over the chilled cream layer.
Return to the refrigerator for at least 2 hours, or until fully set.
To serve, gently remove the ring molds. Decorate with whipped cream swirls, fresh raspberries, or white chocolate shavings for a romantic finish.
