Lazy Cherry Pie Ingredients:
6 egg yolks
6 tablespoons sugar
2 sticks (1 cup) unsalted butter, softened
2 1/4 cups all-purpose flour
6 egg whites, beaten stiff
2 pounds pitted cherries
1/4 cup ground biscuits (or breadcrumbs)
2 tablespoons sugar
1 teaspoon cinnamon
1 egg, beaten (for brushing)
Instructions:
Beat the egg yolks with the sugar until creamy. Add the softened butter and mix until smooth. Gradually incorporate the flour and gently fold in the stiff egg whites.
Divide the dough in half. Grease a square baking pan with butter and dust with flour. Roll out the first half of the dough and press it into the pan.
Spread the pitted cherries evenly over the dough and sprinkle with ground biscuits, sugar, and cinnamon. Cover with the remaining dough and brush the top with the beaten egg.
Bake at 350°F (175°C) until golden brown, about 30–35 minutes. Remove from the oven and sprinkle with vanilla-scented sugar while still hot.
