Amatriciana – Roman Bacon & Tomato Sauce
A Roman classic with a little punch. Use guanciale if possible for authentic flavor.
Ingredients:
- 2 tbsp extra-virgin olive oil
- 3 oz guanciale or pancetta, diced
- 1/3 cup finely chopped onion
- 1 tbsp garlic, minced
- 4 cups peeled plum tomatoes (or 6 oz tomato paste + 3 1/2 cups water)
- 1 tsp dried oregano (or 1 tsp fresh chopped)
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes
- Pinch of sugar (optional, only if tomatoes are tart)
- 3–4 fresh basil leaves, torn
Instructions:
Heat olive oil, sauté guanciale until crispy. Add onion until translucent, garlic briefly. Stir in tomatoes, oregano, spices, and optional sugar. Simmer 30 minutes, stirring occasionally. Finish with basil before serving.
Arrabbiata – Spicy Red Pepper Sauce
“Angry” sauce with a stronger chili kick; traditional in Lazio.
Ingredients:
- 2 tbsp olive oil
- 1/4 cup onion, chopped
- 1/4 cup red chili peppers, minced (fresh or dried)
- 1 tsp garlic, minced
- 4 cups plum tomatoes or 6 oz tomato paste in 3 1/2 cups water
- 1 tsp fresh oregano
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)
Instructions:
Heat oil, sauté onion and chili until soft. Add garlic briefly, then tomatoes, oregano, salt, and pepper. Simmer 35 minutes until thickened. Garnish with parsley. Serve with Penne.
Boscaiola – Mushroom & Tomato Sauce
A “woodsman” sauce with a hint of alcohol for richness.
Ingredients:
- 2 oz dried porcini mushrooms
- 1 tbsp butter
- 1 tbsp olive oil
- 1/4 cup shallot, minced
- 2 oz pancetta, julienned
- 2 tbsp white wine (or cognac if desired)
- 3 1/2 cups chopped tomatoes
- 1/8 tsp black pepper
- 1/4 tsp red pepper flakes
- Salt to taste
Instructions:
Soak mushrooms in warm water 30 min, reserve 1/2 cup liquid. Sauté shallots in butter & oil, add pancetta, then mushrooms. Splash wine, let evaporate. Add tomatoes, spices, and mushroom water. Simmer 40 minutes.
Marinara – Neapolitan Garlic Tomato Sauce
Simple, fragrant, classic for pasta or seafood.
Ingredients:
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 3 1/2 cups plum tomatoes, chopped
- 1/2 tsp dried oregano
- 1/4 tsp salt
- Pinch black pepper
- 1/4 tsp red pepper flakes (optional)
- 3 basil leaves
Instructions:
Sauté garlic in oil until fragrant. Add tomatoes, oregano, salt, pepper, and red pepper flakes. Simmer 30–35 min, stirring. Finish with basil.
Pesto Genovese – Basil & Nut Sauce
Northern Italian specialty with flexibility in nuts.
Ingredients:
- 2 cups fresh basil
- 1/4 cup walnuts or pine nuts
- 1 tsp garlic
- 1/2 cup extra-virgin olive oil
- 2 tbsp unsalted butter
- 1/3 cup Parmigiano-Reggiano
- 1 tbsp Pecorino Romano
- Pinch salt & pepper
Instructions:

Puttanesca – Tomato, Olive & Anchovy Sauce

Ingredients:
- 2 tbsp olive oil
- 3 anchovy fillets, chopped
- 1 tsp garlic, minced
- 3 1/2 cups chopped tomatoes
- 1/2 tsp oregano
- 1/8 tsp salt
- 1/8 tsp black pepper
- 1 tbsp capers, rinsed
- 12 black olives, sliced
- 1 tsp chili flakes (optional)
- 3 basil leaves, chopped
Instructions:
Mash anchovies in oil, add garlic briefly. Stir in tomatoes, oregano, salt, and pepper. Simmer 30 min. Add capers, olives, and chili for 5 min. Finish with basil.
