Ingredients:
4 cups spelt flour
4 cups carbonated water
1 teaspoon baking soda
1 teaspoon sea salt
1 tablespoon oil of choice (olive oil, pumpkin seed oil, flaxseed oil)
Optional seeds (flax, sesame, caraway, sunflower, pumpkin…)
Preparation: In a large bowl, mix the flour, salt, seeds, baking soda, water, and oil. The dough should be thicker than pancake batter, more like dough for fritters. Gently mix with a spoon. Preheat the oven to 400°F (200°C). Bake the bread for about 1 hour, checking after 1 hour with a toothpick. A minute or two more at the top or bottom. Wrap the finished bread in a towel lightly sprinkled with water to keep it soft. The bread stays fresh in a paper bag for few days.
