This creamy homemade mayonnaise is quick to prepare and keeps well in the fridge, making it a versatile base for many dishes.

Ingredients:

1 ½ cups neutral oil (such as sunflower or canola)

2 fresh eggs

3 tablespoons lemon juice

1 tablespoon Dijon mustard

A pinch of salt

A pinch of white pepper

Instructions:

Place all ingredients into a tall container.

Blend with a stick mixer (or blender) until smooth and thick.

Store in a clean, sealed jar in the refrigerator.

Serving tip: For fish dishes, stir in chopped capers and fresh dill just before serving for a flavorful sauce.
