These delicate, twist-shaped pastries are soft, airy, and lightly spiced, filled with a seasonal fruit jam. They’re perfect for cozy fall mornings or festive gatherings, and they have a subtle warmth from cinnamon and nutmeg instead of the traditional vanilla-lemon flavor.
Ingredients
- 3 cups all-purpose flour
- 1/3 cup coconut sugar (or brown sugar)
- 2 tsp instant yeast
- 1/4 cup unsalted butter, melted
- 1/2 tsp salt
- 3 large eggs
- 1 cup warm almond milk (or regular milk)
- 1/2 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/2 cup apple or apricot jam
- Powdered sugar for dusting
- Coconut oil or neutral oil for frying
Directions
- In a large bowl, whisk together flour, coconut sugar, salt, cinnamon, and nutmeg.
- In a small bowl, combine yeast with 1/4 cup warm milk and let sit 5–10 minutes until foamy.
- Add eggs, melted butter, remaining milk, and the yeast mixture to the dry ingredients. Mix until smooth and slightly sticky. Cover and let rise for 40 minutes in a warm spot.
- Roll the dough to 1/2-inch thickness and cut into rectangles about 3×2 inches. Spread 1 tsp of jam in the center and fold or twist the dough to enclose the jam.
- Let pastries rise for 15 minutes.
- Heat oil to 340°F. Fry the twists 2–3 minutes per side until golden. Drain on paper towels.
- Dust with powdered sugar before serving.
