Homemade Mixed Fruit Jam

Ingredients:

2.2 lbs raspberries

1.1 lbs blackberries

3 cups granulated sugar

1 packet (2:1 ratio) pectin

A few fresh mint leaves

Instructions:

Layer the raspberries and blackberries in a pot. Sprinkle the sugar evenly over the top and let the mixture sit for a few hours to release juices (optional).

Cook over low heat, stirring occasionally, for about 30 minutes once the mixture starts boiling.

Add the pectin and continue cooking for another minute or two.

Add a sprig of mint at the end for aroma. Remove the mint before transferring the jam to sterilized jars.

Seal the jars while hot.

  3. Bring the mixture to a boil, reduce the heat, and let it simmer for about 4 minutes while stirring.
  4. Pour the hot jam into sterilized jars, seal tightly, and invert the jars for 5 minutes.

Tip: Red rhubarb varieties produce a richer color and flavor compared to green rhubarb.
