Some cakes are more than dessert — they are memory, patience, and tradition layered together. Milky Way Cake is one of those recipes that rewards time and care, especially in the way its creams are cooked gently over steam, just as generations before us did. Rich with nuts, chocolate, and buttercream, this cake is not rushed, not modernized, and not simplified. It is made slowly, thoughtfully, and with respect for the process — exactly the kind of dessert that turns an ordinary table into a celebration.

Ingredients

Cake Layers (3 layers)

  • 7 large egg whites
  • 10 tablespoons granulated sugar
  • 5 tablespoons finely chopped walnuts
  • 5 tablespoons ground walnuts
  • 2 tablespoons finely ground plain cookies or biscuit crumbs

Cream Filling

  • 21 large egg yolks
  • 1½ cups granulated sugar
  • 3.5 oz white chocolate, finely chopped
  • 3.5 oz dark chocolate, finely chopped
  • 1⅔ cups ground hazelnuts
  • 1⅔ cups ground walnuts
  • 2¼ cups (5 sticks) unsalted butter, softened
  • 2–3 tablespoons powdered sugar (for whipping butter)

Instructions

Bake the Cake Layers

  1. Beat the egg whites until stiff peaks form. Gradually add sugar and continue mixing until glossy.
  2. Gently fold in chopped walnuts, ground walnuts, and cookie crumbs.
  3. Divide the batter into three equal portions.
  4. Bake each layer separately in a parchment-lined 9-inch round pan at 350°F (175°C) for about 15–18 minutes, or until lightly golden.
  5. Cool completely.

Prepare the Steamed Custard Base

  1. Whisk egg yolks with sugar until pale and smooth.
  2. Cook the mixture over a double boiler (steam bath), stirring constantly at first, until thickened.
  3. Once thick, remove from heat and divide evenly into two bowls.

Flavor the Creams

  • Light Cream: Stir white chocolate and ground hazelnuts into one half while warm.
  • Dark Cream: Stir dark chocolate and ground walnuts into the other half while warm.

Allow both creams to cool completely.

Finish the Creams

Whip softened butter with powdered sugar until light and fluffy.
Divide evenly and fold into each cooled cream.

  1. Place one cake layer on a serving plate.
  2. Spread the dark cream evenly.
  3. Add the second layer and spread the light cream.
  4. Top with the final cake layer.
  5. Finish the top as desired — plain, lightly frosted, or decorated with nuts or chocolate.

Traditional Steaming Method (No Microwave)

This cream is cooked the old-fashioned way, exactly as taught by my mother.

I place a saucepan with a little water into a baking pan, then set a second saucepan with beaten egg yolks and sugar over it. Once the water begins to boil, I cook the cream gently for about 20 minutes. At the beginning, I stir constantly until the mixture warms; later, I stir occasionally. The key is to make sure there is always enough water so it doesn’t evaporate. This slow method creates a stable, silky cream every time.
