1 ¼ cups granulated sugar

Juice of 1 lemon

  1. Blend the grapes in a blender until smooth, then strain the mixture to remove seeds and skin.
  2. Pour the grape juice into a saucepan and cook over medium heat for about 20 minutes after it starts boiling.
  3. Add the sugar, stir until fully dissolved, and let it boil again. Cook for an additional 15 minutes.
  4. Stir in the lemon juice and cook for 5 more minutes, skimming any foam from the surface.
  5. Test the marmalade’s thickness by placing a small amount on a cold plate or using a thermometer to ensure it reaches 220°F.

  7. Pour the marmalade into sterilized jars, seal tightly, and store.

Apricot and Almond Marmalade

Ingredients:

2 lbs ripe apricots, chopped

½ cup red wine

5 cups granulated sugar

¼ cup finely ground almonds

Instructions:

In a large pot, combine the apricots, red wine, sugar, and ground almonds. Mix thoroughly.

Cook over medium heat for about 35 minutes, stirring occasionally to prevent sticking.

Once the mixture reaches the desired consistency, remove from heat.

Pour the hot marmalade into sterilized jars, seal tightly, and let cool before storing.

Grapefruit Marmalade

Ingredients:

3.3 lbs grapefruit, washed and chopped

4 ¼ cups water

6 ½ cups granulated sugar

⅓ cup brandy

Instructions:

Chop the grapefruits and grind them into a pulp using a blender or food processor.

Combine the grapefruit pulp with water in a pot and bring to a boil. Reduce the heat, cover, and simmer for 30 minutes.

Remove from heat, cover, and let it rest overnight.

The next day, add sugar to the pot and cook over low heat, stirring gently until the sugar dissolves. Avoid boiling at this stage.

Once the sugar is fully dissolved, increase the heat and bring the mixture to a boil. Cook for about 20 minutes, stirring frequently.

Stir in the brandy during the final 5 minutes of cooking.

Pour the hot marmalade into sterilized jars, seal tightly, and let them cool completely before storing.
