There’s nothing quite like a bowl of homemade chicken soup simmering on the stove. It’s warm, soothing, and filled with the simple goodness of fresh vegetables and tender chicken. This version captures that cozy, homemade flavor with just a few humble ingredients — perfect for cold days or when you need a little comfort in a bowl.
Ingredients:
½ chicken
2 carrots, sliced
1 parsnip, sliced
1 celery stalk or small celery root, chopped
1 handful of soup noodles
Instructions:
Place the chicken and all vegetables in a large pot. Cover with water and bring to a boil.
Lower the heat and simmer until the chicken is tender and the broth turns rich and fragrant.
Remove the chicken, separate the meat from the bones and skin, and shred it into small pieces.
Take out the vegetables, chop them finely, and return both meat and vegetables to the broth.
Season with salt and pepper to taste, then stir in a handful of noodles.
Cook for another 5–7 minutes, or until the noodles are soft. Serve warm.
