As the holiday table fills with comforting aromas, few dishes capture the warmth of home like homemade cheese preserved in oil. Once a staple of festive gatherings, this rustic delicacy is returning to modern kitchens—bringing together the simplicity of old recipes and the richness of today’s flavors.

Ingredients:

  • 1 pound firm white cheese or feta, cut into small cubes
  • 1 cup olive oil oil
  • 2 cloves garlic, thinly sliced
  • 2 tablespoons chopped sun-dried tomatoes
  • 1 teaspoon dried thyme or a few fresh sprigs
  • 1 teaspoon dried rosemary or a few fresh sprigs
  • 1 small dried red pepper, sliced
  • 6–8 whole black peppercorns
  • Optional: a few olives, dried cranberries, or pomegranate seeds for decoration

Directions:

  1. Cut the cheese into cubes and gently pat dry.
  2. Layer the cheese in a clean glass jar, adding garlic, herbs, and sun-dried tomatoes between layers.
  3. Sprinkle in the peppercorns and sliced red pepper.
  4. Pour oil until the cheese is fully covered.
  5. Seal the jar and let it rest in a cool, dark place for 3–4 days so the flavors blend beautifully.
  6. Serve with homemade bread, roasted meats, or as a festive appetizer. Add a few pomegranate seeds or cranberries for a bright, festive accent.
