This soft and fluffy white cake is a classic homemade treat with a light almond aroma and buttery texture. It’s simple to make and perfect for any occasion — from afternoon coffee to special celebrations.

Ingredients

  • 2 cups all-purpose flour
  • 1 ¾ cups powdered sugar
  • 5 large eggs, separated
  • ⅔ cup margarine or unsalted butter, softened
  • 1 ½ teaspoons baking powder
  • ½ teaspoon almond extract (or 2 tablespoons finely ground almonds)
  • Nonstick spray or shortening (for greasing the pan)
  • 2 tablespoons plain breadcrumbs (for dusting the pan)

Directions

Preheat your oven to 350°F. Grease a medium-sized cake pan with shortening or nonstick spray, then sprinkle it lightly with breadcrumbs.

In a large bowl, beat the margarine until light and fluffy. Add the egg yolks and powdered sugar alternately, mixing until smooth. Gradually add the flour and baking powder, stirring until combined. Mix in the almond extract.

In a separate bowl, beat the egg whites until stiff peaks form. Gently fold them into the batter with a spatula until fully incorporated. Pour the mixture into the prepared pan and spread evenly.

Bake for about 40 minutes, or until golden and a toothpick inserted in the center comes out clean. Let the cake cool before slicing.
