Fresh apples are lightly simmered with lemon, vanilla, and raisins until tender and fragrant, then topped with chopped walnuts and a touch of cinnamon. Ingredients (Serves 4):
- 4 medium apples (such as Fuji, Honeycrisp, or Gala)
- 2 tablespoons raisins
- 2 tablespoons finely chopped walnuts
- 1 lemon, sliced into thin rounds
- 1 vanilla bean (or 1 teaspoon vanilla sugar)
- ¼ teaspoon ground cinnamon (adjust to taste)
- 2 cups water

Instructions:
In a saucepan, bring 2 cups of water to a light boil. Add the raisins, lemon slices, and the split vanilla bean (or vanilla sugar). Let simmer gently for 2–3 minutes so the flavors blend.
Remove the lemon slices and raisins with a spoon and set aside.
Peel and dice the apples into small pieces. Add them to the hot mixture and poach for about 3–4 minutes, until just tender.
Transfer the apples to a bowl and mix with the cooked raisins and lemon slices.
Sprinkle with chopped walnuts and cinnamon. Drizzle a little of the warm syrup over the top and serve warm or chilled.
