(Serves 4)

Ingredients:

1 large head of broccoli

3 carrots

1 head of garlic

1 green bell pepper, 1 red bell pepper, and 1 yellow bell pepper

A small stalk of celery

Salt and pepper to taste

1 1/4 cups chicken or beef broth (or 1 vegetable bouillon cube with water)

Instructions:
Break the broccoli into florets. Dice the celery, carrots, and bell peppers into small cubes. Cut the garlic into slices. Put all the vegetables into a pot, pour in water and broth, then season with salt, pepper, and dried herbs if desired. Cook over low heat for about 40 minutes.

This light soup is very nourishing and can be turned into a hearty vegetable stew by adding some chicken, veal meat, or soy cubes.
