These soft, buttery biscuits are perfect for breakfast, snacks, or packed lunches. Quick to make and easy to love.
Ingredients:
2 cups all-purpose flour
1 1/2 tablespoons baking powder
1 teaspoon sugar
3/4 teaspoon fine sea salt
1 stick (1/2 cup) cold unsalted butter, cut into cubes
1/2 cup whole milk
1/2 cup heavy cream
1 tablespoon melted butter, for brushing
Instructions:
Cut the butter into 1/2-inch cubes and chill until ready to use. In a large bowl, whisk together flour, baking powder, sugar, and salt. Add the cold butter and use your fingers or a pastry cutter to blend until the mixture resembles coarse crumbs with pea-sized butter pieces.
Set aside 2 tablespoons of the milk and cream mixture. Add the rest to the dry ingredients and stir gently until mostly combined. Do not overmix.
Turn the dough onto a floured surface. If sticky, sprinkle lightly with flour. Shape into a rectangle, fold in half, and repeat once more. Roll out into a 5 x 10-inch rectangle, about 1/2 inch thick. Use a 2.5-inch round cutter dipped in flour to cut 8 biscuits. Re-roll the scraps and cut out 2 more.
Place biscuits on a parchment-lined baking sheet, 1 inch apart. Bake at 450°F for 12–15 minutes, or until golden on top. Brush with melted butter while hot. Cool on a rack for 10 minutes and serve warm.
