Crispy on the outside, tender on the inside—these roasted potatoes get a bold flavor upgrade from a garlicky yogurt and herb mix. Simple, affordable, and packed with savory goodness, they’re perfect for any weeknight meal.

Ingredients:

5 large potatoes, peeled and sliced

2 tablespoons vegetable oil

2 tablespoons thick plain yogurt (Greek-style recommended)

1 teaspoon salt

¼ teaspoon black pepper or cayenne pepper

½ teaspoon dried mint

½ teaspoon dried thyme

2 garlic cloves, finely chopped

Optional: chopped bacon or prosciutto for added flavor

Instructions:

Preheat the oven to 400°F.

In a bowl, mix the yogurt, salt, pepper, mint, thyme, and garlic. Toss the potato slices in the mixture until fully coated. Stir in bacon or prosciutto if using.

Spread the potatoes on a baking sheet lined with parchment paper. Drizzle with vegetable oil.

Bake for about 40 minutes, flipping halfway through, until golden brown and crisp on the edges.
