Ingredients:
- 2 medium zucchinis
- 3.5 oz cream cheese
- 1 tablespoon butter
- 2 garlic cloves
- Olive oil as needed
- Pinch of dried oregano
- Salt and pepper to taste
Instructions:
- First, wash the zucchinis and slice them into thicker rounds, about 1 inch thick. Using a small spoon, carefully scoop out the center of each round, but not all the way through — you want to create an indentation for the filling while keeping the round intact. Don’t discard the scooped-out zucchini pieces.
- Heat a little olive oil in a pan and sauté the finely chopped garlic along with the scooped-out zucchini centers. Once the vegetables soften, add the butter and cook for a short while, then remove from heat. Stir in the cream cheese, season with salt and pepper, and add a pinch of dried oregano.
- Fill each zucchini round with the prepared mixture and carefully arrange them on a baking sheet lined with parchment paper. If you like, you can grate a little hard cheese, such as mozzarella or parmesan, on top.
- Bake in a preheated oven at 400°F for about 15 minutes, until the zucchini softens and the filling turns golden.
Enjoy this easy and irresistible dish!
