There’s nothing quite like this nostalgic dessert to warm up chilly winter days. The crispy coating, the hint of cinnamon, and the comforting aroma bring back memories of gathering in grandma’s cozy kitchen after a day of playing in the snow.

Serves: 4

Ingredients

For the Apples:

  • 1 lemon
  • 1/2 cup sunflower oil (or other neutral oil) for frying
  • 4 medium apples

For the Batter:

  • 1 1/4 cups all-purpose flour
  • Zest of 1 lemon
  • 3 tablespoons sunflower oil
  • 3/4 cup white wine
  • 3 large eggs

Instructions

  • Separate the egg yolks and whites. Whip the egg whites into stiff peaks and set aside.
  • In a separate bowl, whisk the egg yolks. Add the oil and wine, mixing until smooth. Gradually incorporate the flour and lemon zest.
  • Gently fold the whipped egg whites into the batter until well combined.

  • Core the apples and remove the seeds. Slice them into 3/4-inch thick rings.
  • Place the apple slices in a bowl and drizzle with the juice of one lemon. This prevents browning and enhances flavor.

  • Heat sunflower oil in a deep pan or fryer to 350°F (175°C).
  • Dip each apple ring into the batter, ensuring it is fully coated. Fry in the hot oil for about 5 minutes, turning occasionally, until golden brown.
  • Transfer the fried apples to a plate lined with paper towels to drain excess oil.

Fried apples are best enjoyed fresh and warm. Pair them with a scoop of vanilla ice cream for an indulgent dessert or serve with hot tea for a cozy treat.
