Ingredients –

For the Shells:

  • 2 cups all-purpose flour
  • 2 teaspoons granulated sugar
  • 1 tablespoon lard
  • 2 large eggs
  • 1 tablespoon white vinegar
  • A pinch of salt

For the Filling:

  • 1/2 cup granulated sugar
  • 2 cups ricotta cheese
  • 1/2 cup chocolate chips or melted chocolate

Instructions

  1. In a large bowl, combine the flour and sugar. Whisk the eggs in a separate bowl, then add the salt and lard, mixing well. Gradually incorporate the wet ingredients into the flour mixture. Let the dough rest for 15 minutes.

  2. Add the vinegar to the dough and knead by hand until smooth. The dough will be dry, so patience is key. Cover with plastic wrap and refrigerate for at least 1 hour. Allow it to come to room temperature for 30 minutes before rolling out.

  3. Roll out the dough thinly and use a round cutter or a glass to cut circles. Wrap each circle around a metal cannoli mold, sealing the edges with egg whites. Repeat with the remaining dough.

  4. Heat oil in a deep pan to 375°F (190°C). Fry the dough-wrapped molds until golden brown. Carefully remove the shells from the molds once slightly cooled.

  5. In a bowl, beat the sugar and ricotta cheese until smooth. Melt the chocolate using a double boiler, then mix it into the ricotta mixture.

  6. Use a piping bag to fill the cooled shells with the ricotta mixture. Decorate the ends with additional chocolate chips or drizzle melted chocolate on top.
