Ingredients (for 1 serving):
1 medium tomato, sliced
1 slice of white cheese (about ½ inch thick, such as feta or farmer’s cheese)
1 teaspoon olive oil, plus extra for drizzling
Fresh or dried herbs of your choice (basil, oregano, or thyme work great)
Salt and pepper, to taste
Preparation:
Preheat your oven to 350°F (180°C).
On a piece of aluminum foil, lay out the tomato slices in a single layer. Drizzle with olive oil and sprinkle your preferred herbs, salt, and pepper.
Place the slice of cheese on top of the tomatoes. Drizzle a little more olive oil over the cheese and sprinkle additional herbs if desired.
Wrap the foil tightly to create a sealed packet. Place the packet on a baking sheet and bake for 15 minutes until the cheese softens and the tomatoes release their juices.
