Ingredients:
- 2 tablespoons butter
- 1 small onion, diced
- 2 cloves garlic, minced
- 3 medium potatoes, diced
- 1 carrot, sliced
- 1 celery stalk, diced
- 2 parsnips, diced
- 6 cups (1.5 quarts) chicken or vegetable broth
- 10 ounces (about 2 cups) cooked chicken, shredded or cubed
- 3/4 cup heavy cream
- 2 tablespoons all-purpose flour
- Salt, black pepper, and nutmeg to taste
Instructions:
- In a large pot, melt the butter over medium heat. Add the onion and garlic, sautéing until softened and translucent (about 2-3 minutes).
- Add the carrot, potatoes, celery, and parsnips. Cook for another few minutes, stirring occasionally.
- Pour in the chicken or vegetable broth and add the cooked chicken. Stir well, cover, and let simmer over medium-low heat until the vegetables are tender (about 20-25 minutes).
