Cornmeal mush is a traditional, easy dish made from cornmeal. It can be served sweet with honey or jam, or savory with cheese and vegetables. This recipe shows you how to make it in a few tasty ways.
Ingredients:
- Cornmeal mush
- Honey or plum jam
- A little margarine or butter
Sweet Version:
Cut the cornmeal mush into rounds about 1 inch thick. Fry them in a pan with a little margarine until golden on both sides. Serve hot, drizzled with honey or spread with plum jam.
With Cheese:
- Cornmeal mush
- 14 oz (400 g) semi-hard cheese
- 14 oz (400 g) creamy clotted cream
Cut the cornmeal mush into 1-inch thick rounds and fry in a pan with a few drops of oil for about 3 minutes per side until a thin crust forms. When frying the second side, place thin slices of semi-hard cheese on top and let it melt slightly. Remove from heat and serve warm with yogurt or sour milk.
With Vegetables:
- Cornmeal mush
- 1.75 cups (about 400 ml) tomato sauce
- A few zucchinis, sliced
- A jar of mushrooms or fresh mushrooms, sliced
- A little Parmesan
Arrange the 1-inch thick cornmeal mush rounds in an oven-safe dish. In a pan, sauté sliced mushrooms and zucchinis with a little olive oil. Season with salt and spices, then add the tomato sauce and simmer gently until thickened. Pour the sauce over the cornmeal mush rounds and bake in a hot oven at 480°F (250°C) for 10 to 15 minutes. Remove from oven and sprinkle with grated Parmesan. Serve warm.
