Cold Garlic Soup is a light and refreshing chilled dish with a smooth, creamy texture and a subtle garlic flavor. This version combines mild nuttiness with fresh, crisp ingredients for a balanced taste that’s both cooling and satisfying. Perfect for warm days, it’s an easy make-ahead recipe that works beautifully as a starter or a light meal.

Ingredients:

1/2 cup cashews, soaked,
1/2 cup white sandwich bread, torn,
3 cloves garlic,
1/2 cup plain Greek yogurt,
2 tablespoons olive oil,
1 tablespoon lemon juice,
1/2 teaspoon salt,
2 cups cold vegetable broth,
1/2 cup green apple, finely diced,
1/4 cup celery, finely chopped,
ice cubes as required.

METHOD;

Soak the cashews in warm water for 20 minutes, then drain.

In a blender or food processor, combine the cashews, bread, garlic, yogurt, and salt. Blend until smooth.

Add the olive oil gradually while blending, followed by the lemon juice.

Pour in the cold vegetable broth and blend again until the soup is creamy and smooth.

Transfer to a bowl, stir in the diced apple and celery.

Add a few ice cubes and chill in the refrigerator until very cold.

Serve well chilled.
