Moussaka is one of Greece’s most popular foods, known for its rich flavors, creamy topping, and layers of tender eggplant. This lighter version uses soy mince for a vegetarian twist, while still keeping all the authentic Mediterranean aromas. Perfect for family dinners or special gatherings, this dish is a true showstopper.

Ingredients

For the Moussaka:

  • 12 oz (about 2 ½ cups) soy mince, prepared according to package directions
  • 3 garlic cloves, minced
  • 2 medium onions, finely chopped
  • ¼ teaspoon ground cinnamon (optional, for a warm flavor)
  • 1 can (14 oz) diced tomatoes
  • 2 tablespoons fresh basil, chopped (or 1 ½ teaspoons dried basil)
  • 2 tablespoons tomato paste
  • 6 tablespoons plain dry breadcrumbs
  • 3 tablespoons olive oil, divided
  • ½ tablespoon ground cumin
  • 1 bay leaf
  • 6 tablespoons grated Parmesan cheese
  • 3 large egg yolks (or egg substitute)
  • 2 cups prepared béchamel sauce (recipe below)
  • 2 large eggplants, peeled and sliced
  • Salt and freshly ground black pepper, to taste

For the Béchamel Sauce:

Black pepper, to taste

2 tablespoons butter (or margarine)

2 tablespoons all-purpose flour

2 cups whole milk or unsweetened soy milk

½ teaspoon salt

Instructions

Prepare the Eggplants

  1. Peel and slice the eggplants. Sprinkle with 1 teaspoon salt and let them sit for 15 minutes to draw out excess moisture.
  2. Rinse well, pat dry, and fry in half of the olive oil until lightly golden on both sides. Place on paper towels to drain.

Cook the Filling

  1. In a large saucepan, heat the remaining olive oil. Add the soy mince and garlic, cooking for about 5 minutes.
  2. Stir in the onions and cook until softened.
  3. Add the tomatoes, basil, cumin, cinnamon (if using), and tomato paste. Season with salt and pepper, then add the bay leaf.
  4. Bring to a boil, reduce heat, cover, and simmer for 15 minutes. Remove bay leaf before layering.

Assemble the Moussaka

  1. Grease a baking dish with a little oil or butter. Sprinkle half the breadcrumbs over the base.
  2. Spread half the soy mince mixture in the dish, top with half the eggplant slices, then sprinkle with half the Parmesan.
  3. Repeat with the remaining soy mince, eggplant, and half of the remaining Parmesan.

Prepare the Béchamel

  1. Melt butter in a saucepan. Stir in flour and cook for 1 minute over low heat.
  2. Slowly whisk in the milk until smooth and thickened. Season with salt and pepper.
  3. In a small bowl, beat the egg yolks. Add a few spoonfuls of hot béchamel to temper them, then stir into the rest of the sauce.

Bake

  1. Pour the béchamel sauce evenly over the layered dish. Sprinkle with the remaining Parmesan and breadcrumbs.
  2. Bake at 350°F (180°C) for 40–45 minutes, or until golden brown on top.
  3. Let it rest for at least 10 minutes before serving so the layers hold together.

Serving Tip

Serve warm with a crisp green salad or crusty bread for a complete Mediterranean meal.
