Chicken stew is a classic, nourishing dish that combines tender chicken with fresh vegetables and a creamy broth. This recipe focuses on straightforward preparation using simple ingredients to create a balanced, satisfying meal. With subtle flavors enhanced by Parmesan and lemon, it provides comfort and nutrition in every serving.
Chicken Stew ingredients:
1 lb boneless white chicken meat, diced
1 medium onion, finely chopped
2 medium carrots, grated or sliced
1 medium parsnip, grated or sliced
1/4 cup rice
1/4 cup peas (fresh or frozen)
2 tablespoons grated Parmesan cheese
1 egg yolk
3.5 fl oz heavy cream (about 1/3 cup plus 1 tablespoon)
1 tablespoon all-purpose flour
1 lemon (slice plus juice)
Fresh parsley leaves, chopped
1 chicken bouillon cube
1-2 tablespoons oil
Pepper to taste
About 6 cups water (1.5 liters)
Preparation:
- Heat oil in a pot over medium heat. Add the chopped onion and sauté briefly until translucent.
- Add the grated parsnip, grated carrots, peas, and diced chicken. Pour in a small amount of water to prevent sticking and simmer for about 20 minutes.
- Add 6 cups of water, crumble in the chicken bouillon cube, add rice and chopped parsley. Cook for another 20 minutes until rice and vegetables are tender.
- In a small bowl, mix the flour with a little water to make a smooth paste. Stir this paste into the broth and cook for a few minutes until slightly thickened.
- In another bowl, whisk together the egg yolk, heavy cream, and Parmesan cheese. Slowly add a few spoonfuls of hot broth to this mixture to temper it, then stir it back into the pot.
- Just before serving, add a slice of lemon and a splash of lemon juice. Season with pepper to taste.
