This classic vegetable soup is light, nutritious, and full of natural flavors. Made with a mix of fresh vegetables and a flavorful broth, it’s perfect for a quick lunch, cozy dinner, or anytime you need a comforting, healthy meal.

Ingredients

1 small onion, chopped

2 cups assorted fresh vegetables: carrots, celery, peas, parsley root, potatoes, zucchini

2 ½ cups vegetable broth

1 medium tomato, diced

Salt and pepper, to taste

1 teaspoon olive oil (optional, for sautéing)

Instructions

Heat the olive oil in a medium pot over medium heat. Add the chopped onion and sauté until soft and translucent.

Dice the carrots and celery into small cubes, then add them to the pan. Sauté for a few minutes until they start to soften.

Add the peas, parsley root, potatoes, and zucchini, and continue cooking, stirring occasionally.

Pour in the vegetable broth, bring to a gentle boil, then reduce heat and simmer until all vegetables are tender.

Add the diced tomato near the end of cooking and season with salt and pepper to taste. Serve hot.

Tip

For extra flavor, sprinkle with fresh herbs such as parsley or dill just before serving, or add a dash of lemon juice to brighten the soup.
