This classic chicken soup with light dumplings is the perfect cozy meal for any day. Simple ingredients come together to make a warm, comforting bowl that feels homemade and satisfying.

Ingredients:

  • 2 chicken bouillon cubes
  • About 8 cups water (2 liters)
  • Salt, seasoning (like Vegeta) to taste
  • 1 carrot
  • 8 tablespoons fine semolina (grits)
  • 2 eggs
  • 1 tablespoon lard or butter

Instructions:
Pour the water into a pot, add the chopped carrot, and cook until the carrot softens. Add the chicken bouillon cubes and simmer for another 10 minutes.

In a bowl, crack the eggs and whisk them with a fork. Add the lard (or butter) and gradually stir in the semolina until the mixture thickens slightly. Season the batter to make the dumplings flavorful.

Using the tip of a spoon, scoop small dumplings and drop them into the simmering soup. For the first time, dip the entire spoon in the water so the dumplings slide off easily next time. Season the soup and cook until the dumplings are tender.
