This is a simple, wholesome meal straight from the oven. Tender mackerel fillets nestled over a colorful bed of roasted vegetables—healthy, satisfying, and full of flavor.
Ingredients:
- 3 whole mackerel, cleaned and sliced into chunks
- 4 medium potatoes, peeled and chopped
- 1 large tomato, sliced
- 1 yellow onion, sliced into rings
- 1 carrot, sliced into rings
- 1 garlic clove, minced
- Salt and pepper, to taste
- 1/2 teaspoon all-purpose seasoning (optional)
- 2–3 tablespoons vegetable oil
- A bit of chopped fresh parsley
Preparation
Clean the mackerel, remove the insides, rinse well with cold water, and season with salt and pepper.
Peel and chop the potatoes. Slice the carrot, onion, and tomato. Place all the vegetables in a baking dish, season with salt, pepper, and a bit of all-purpose seasoning if desired. Sprinkle with minced garlic and chopped parsley.
Place the seasoned mackerel pieces on top of the vegetables. Drizzle with vegetable oil.
Cover the dish with foil or a baking-safe lid and bake in a preheated oven at 400°F (200°C) for about 40 minutes, or until the vegetables are tender and the fish is cooked through.
Serve warm with crusty bread or a green salad on the side.
