Ingredients:
- 6 small chicken breast fillets
- 2/3 cup orange juice
- Zest of 1 orange
- 1 whole orange (peeled and thinly sliced)
- 1 tablespoon brown sugar
- 1 teaspoon mustard
- 3 tablespoons butter, divided
- 2 tablespoons vegetable oil
- 2 teaspoons cornstarch, mixed with water
- 1 tablespoon seasoning mix (like all-purpose or chicken seasoning)
Preparation:
- Lightly pound the chicken fillets to even thickness. Sprinkle them with the seasoning mix and coat them with mustard.
- Heat the oil and half the butter in a large skillet over medium heat. Sear the chicken fillets on both sides for about 6–7 minutes until golden and cooked through. Remove the chicken and set aside.
