When you want to make something delicious yet simple, chicken breasts in leek and mushroom sauce is the perfect choice. This dish combines juicy chicken with the creamy richness of a sauce made from sautéed leeks and mushrooms.

Ingredients:

  • 1 lb chicken breasts
  • 2 large leeks
  • 14 oz mushrooms (button mushrooms or similar)
  • 1 cup heavy cream (for cooking)
  • Olive oil, butter, or sunflower oil (for cooking)
  • Salt, pepper, and herbs (e.g., chives, basil, fresh parsley)

Instructions

  1. Prepare the Chicken:
    • Heat a bit of olive oil (or your preferred cooking fat) in a pan.
    • Sear the chicken breasts quickly on both sides until golden brown.
    • Remove the chicken and place it in a covered dish to keep warm.
  2. Sauté the Vegetables:
    • In the same pan, add a little more oil if needed.
    • Add sliced leeks and mushrooms. Sauté until softened and lightly golden.
  3. Make the Sauce:
    • Stir in the heavy cream.
    • Add your desired seasonings: salt, pepper, and a mix of fresh herbs like chives, basil, and parsley.
  4. Combine and Finish:
    • Return the chicken to the pan with the sauce.
    • Let it simmer gently for a few minutes to heat the chicken through and allow the flavors to meld.
  5. Serve:
    • Serve hot with your favorite side dish, like rice, mashed potatoes, or a light salad.
