Ingredients:
- 2 lbs fresh ricotta or cottage cheese
- 1/2 cup sour cream
- 1 garlic clove, minced
- 1 large egg
- 2 tablespoons fresh parsley, chopped
- Salt and black pepper, to taste
- 4–6 medium-sized bell peppers (any color)
- 1/4 cup black olives, sliced (optional)
- 1 tablespoon butter or oil for greasing
Preparation:
- Preheat your oven to 400°F.
- In a large mixing bowl, combine the ricotta or cottage cheese, sour cream, minced garlic, egg, parsley, salt, and black pepper. Mix well.
- Wash the bell peppers thoroughly. Cut off the tops and remove the seeds and inner membranes.
- Fill each bell pepper with the cheese mixture, packing it in gently. Place the stuffed peppers in a greased baking dish.
- Optionally, top each pepper with slices of black olives for added flavor and decoration.
- Bake the peppers for about 30 minutes, or until they are tender and the filling is lightly browned.
