Ingredients:

  • 2 lbs fresh ricotta or cottage cheese
  • 1/2 cup sour cream
  • 1 garlic clove, minced
  • 1 large egg
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper, to taste
  • 4–6 medium-sized bell peppers (any color)
  • 1/4 cup black olives, sliced (optional)
  • 1 tablespoon butter or oil for greasing

Preparation:

  1. Preheat your oven to 400°F.
  2. In a large mixing bowl, combine the ricotta or cottage cheese, sour cream, minced garlic, egg, parsley, salt, and black pepper. Mix well.
  3. Wash the bell peppers thoroughly. Cut off the tops and remove the seeds and inner membranes.
  4. Fill each bell pepper with the cheese mixture, packing it in gently. Place the stuffed peppers in a greased baking dish.
  5. Optionally, top each pepper with slices of black olives for added flavor and decoration.
  6. Bake the peppers for about 30 minutes, or until they are tender and the filling is lightly browned.

Serve these cheese-stuffed bell peppers hot as a main course or a satisfying side dish.
