A savory, golden-baked pastry with a creamy herb cheese filling — perfect for brunch or a cozy snack.
Ingredients:
2 sheets of store-bought puff pastry, thawed
5 oz (150 g) feta cheese, crumbled
5 oz (150 g) ricotta or quark cheese
1 large egg
4 tbsp plain yogurt
1 small bunch fresh parsley, chopped
Olive oil or melted butter for brushing
Optional: extra yogurt for serving
Instructions:
Preheat the oven to 400°F.
Prepare a baking sheet (or the one included with the puff pastry) and lay down one sheet of puff pastry. Lightly prick the surface with a fork to prevent excessive puffing.
In a bowl, combine feta, ricotta, egg, yogurt, and chopped parsley. Mix until smooth and evenly combined.
Spread the cheese mixture evenly over the first puff pastry sheet. Cover with the second sheet of puff pastry, gently pressing the edges to seal. Brush the top lightly with olive oil or melted butter for a golden finish.
Bake on the middle oven rack for 20–25 minutes, until the pastry is golden and puffed.
Serve warm, optionally with a side of plain yogurt.
You can cut the pastry into individual squares before baking for easy serving.
