Ingredients (serves 2–4):
- 3–5 medium heirloom tomatoes, sliced
- 3 oz (85 g) goat cheese or feta, crumbled or sliced
- 1 oz (30 g) sharp cheddar, thinly sliced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon balsamic vinegar (optional, for a tangy touch)
- Fresh basil and chives, roughly chopped, for garnish
- Freshly ground black pepper, to taste
Instructions:
- Slice the tomatoes into rounds about 1/4 inch thick. Slice or crumble the cheeses into small pieces.
- On a serving plate, alternate layers of tomato slices, goat cheese, and cheddar, stacking them slightly for a layered effect.
- Drizzle olive oil (and balsamic vinegar, if using) evenly over the top.
- Sprinkle with chopped basil and chives. Add black pepper to taste.
- Serve immediately or chill briefly for a cool, refreshing salad.
