This baked savory roll is made with a soft egg-based dough and filled with shredded chicken, sautéed onions, and sour cream. Simple, rich, and best served warm.
Ingredients:
For the dough:
- 2 cups milk
- 3 tablespoons all-purpose flour
- 4 egg yolks
- 4 egg whites (beaten to stiff peaks)
- Pinch of salt
For the filling:
- 1 whole chicken
- 3 medium onions, finely chopped
- 2 egg yolks
- 2 egg whites (beaten to stiff peaks)
- 3 tablespoons sour cream
For topping:
- Additional sour cream for brushing
Instructions:
- In a saucepan, heat the milk and whisk in the flour. Cook over medium heat, stirring constantly, until the mixture thickens.
- Remove from heat and let cool. Stir in the salt, egg yolks, and gently fold in the whipped egg whites.
- Pour the batter into a greased and floured baking sheet. Bake until set and lightly golden.
- Turn the baked dough out onto a kitchen towel and roll it up while warm. Let cool completely.
Prepare the filling:
- Sauté the chopped onions until soft.
- Add chopped chicken pieces (pre-cooked or sautéed until the meat pulls away from the bone).
- Remove the meat from the bones, grind or finely chop it, then combine with egg yolks, whipped egg whites, and sour cream.
- Carefully unroll the cooled dough, spread the filling evenly, and roll it back up.
- Place the roll in a baking dish, brush with sour cream, and bake for another 15 minutes.
- Serve warm.
