Soft, cheesy, and fragrant, this garlic bread is perfect as a snack or side dish. Each pull-apart piece is layered with garlic butter, scallions, and a mix of cheeses.
Ingredients (makes 6 servings):
- For the dough:
- 6 1/2 oz (180 g) all-purpose flour
- 1 teaspoon salt
- 1 pinch granulated sugar
- 1 1/2 teaspoons (4 g) active dry yeast
- 1 large egg
- 1 tablespoon (15 g) unsalted butter, softened
- 3.4 fl oz (100 ml) warm milk
- For the garlic butter filling:
- 2 tablespoons (25 g) unsalted butter, softened
- 1 tablespoon chopped scallions
- 1 tablespoon crushed garlic
- Pinch of salt
- Small pinch of black pepper
- For the topping:
- 2 oz (60 g) mozzarella, shredded
- 1 1/2 oz (40 g) cheddar, shredded
- Extra chopped scallions and cheese cubes for sprinkling
Instructions:
- In a mixing bowl, combine flour, salt, sugar, yeast, and egg. Add the softened butter and mix by hand or with a spatula until the dough comes together. It will be sticky—do not add extra flour.
- After 5 minutes of gentle mixing, knead for another 5 minutes, folding the dough without pressing too hard.
- Place the dough in a lightly greased bowl, cover with a damp cloth, and let it rise for 45–60 minutes until doubled in size.
- Turn the dough onto a floured surface and fold it 2–3 times gently. Cover and let rest 10 minutes.
- While the dough rests, mix the softened butter with garlic, scallions, salt, and pepper for the filling.
- Roll the dough into a 8×8-inch (20×20 cm) square. Draw a light line across the middle to mark halves. Spread the garlic butter mixture on one half and fold the other half over it.
- Sprinkle mozzarella and cheddar evenly over the folded dough. Roll the dough from the short side into a tight log. Lightly flour the surface and shape neatly.
- Cut the roll into 6 equal pieces and arrange in a round tart pan or oven-safe dish like a flower, leaving space for expansion. Cover loosely with plastic wrap and let rise 45 minutes.
- Remove the wrap, sprinkle additional scallions and cheese cubes on top.
- Bake in a preheated oven at 350°F (180°C) for 13–15 minutes, or until golden and cooked through.
- Serve warm, pull apart, and enjoy!
