Bean Soup with Vegetables is a tasty dish, perfect for cold days. It’s made with white beans and vegetables like carrots, potatoes, and celery.
Ingredients:
- 1 cup of large white beans
- 1 onion
- 1 clove of garlic
- 1 bay leaf
- 1 large carrot
- 1 potato
- 1 small celery root
- Half a bunch of parsley leaves
- Pepper, salt
Preparation:
Soak the beans in cold water overnight to swell. The next day, cook them with the bay leaf in unsalted water. Once cooled, mash the beans.
Meanwhile, clean and chop the vegetables: slice the carrot into rounds, and cut the potato and celery into cubes.
In a separate pot, sauté the chopped onion and crushed garlic in oil with a tablespoon of water. Then add the prepared vegetables. Pour in enough water to barely cover them, and simmer until the vegetables are soft.
Add the mashed beans, dilute with water to your desired consistency, and simmer for a few minutes. Season with salt and pepper to taste, and sprinkle with chopped parsley.
This soup can be served with toasted bread or, if desired, with a splash of vinegar for added tanginess.
