Bean Soup with Pork is perfect for colder days. It’s made with tender beans, pork, and vegetables, all cooked together for a rich and tasty flavor.
Ingredients:
- 1 cup (8 oz or 250 g) beans
- 3 tablespoons (1.5 oz or 40 g) lard or vegetable oil
- 1 medium onion, finely chopped
- 7 oz (200 g) pork, diced
- 1/2 teaspoon paprika
- 1 teaspoon flour
- 1 garlic clove, minced
- 2 medium potatoes, diced
- 1 medium tomato, peeled and chopped
- Fresh parsley, chopped
- 2–3 tablespoons sour cream
- Salt and pepper to taste
Instructions:
-
- Sort and wash the beans, then soak them in cold water for several hours (or overnight). Drain and cook in fresh water until almost tender.
-
- Heat the lard or oil in a pan. Sauté the onion until translucent.
- Add the diced pork, paprika, minced garlic, diced potatoes, and chopped tomato.
- Add a little water and simmer the mixture until the vegetables and meat are tender.
-
- Once the beans are nearly cooked, add the pork and vegetable mixture to the beans.
- Simmer everything together until the flavors combine, and the beans and meat are fully tender.
-
- Mix the flour with a small amount of cold water to create a smooth paste. Stir it into the soup and let it cook on low heat for another 10 minutes, stirring occasionally.
-
- Before serving, mix the sour cream with chopped parsley and stir it into the soup. Adjust the seasoning with salt and pepper to taste.
