Bean and Vegetable Soup is a warm and tasty dish made with simple, healthy ingredients. It combines soft beans with fresh vegetables like carrots, potatoes, and celery. This soup is easy to make and perfect for a cozy meal.

Ingredients:

  • 1 cup of large white beans
  • 1 onion
  • 1 clove of garlic
  • 1 bay leaf
  • 1 large carrot
  • 1 potato
  • A small celery root
  • Half a bunch of parsley leaves
  • Salt and pepper to taste

Preparation:
Soak the beans in cold water overnight to soften. The next day, cook the beans with the bay leaf in unsalted water until tender. Once cooled, mash or blend the beans.

Meanwhile, clean and chop the vegetables: slice the carrot into rounds and dice the potato and celery into cubes. In a separate pot, sauté the chopped onion and crushed garlic in a little oil with a tablespoon of water. Add the prepared vegetables and cook, adding enough water to cover them, until the vegetables soften.

Next, add the mashed beans to the vegetables, dilute the soup with water to your preferred consistency, and simmer briefly. Season with salt and pepper to taste and sprinkle with chopped parsley before serving.

This soup pairs well with toasted bread or, if desired, can be flavored with a splash of vinegar for a tangy touch.
